Creating the sauce:

2 cans of 32 ounce crushed tomatoes
1 can of 6 oz tomato paste
1/2 sliced onion (medium size onion)
2 basil leafs
1 tsp oregano
1/4 cup of Parmesan cheese
Salt and pepper to taste

In a large pot, pour 2 tbl of olive oil and heat on medium heat. Add the sliced onion and cook for about 2 min. Add the garlic and cook for about 30 seconds. Remove the onions. Pour 2 cans of crushed tomatoes , 1 can of water and 1 can of tomato paste into the pot. Add basil leaf and oregano. Cook on low heat and stir occasionally.

(Some people like to add a half cup of red wine to their sauce for added flavor)

Cooking the sausage:

Get 1 pound of the hot Italian sausage. (Syracuse hot sausage or the hot sausage sold a Jimmy’s work the best)
Cut the sausage links in half
Cook the sausage links in a frying pan using 2 tbl of olive oil
Cook sausages until brown (about 5-10 min)
Pour sausages into the sauce where they will continue to cook.
Pour the oil and sausage bits from the frying pan into the sauce and stir. ( this step is Important because it adds extra flavor to the sauce)

Add the meatballs to the sauce and let all of the ingredients cook together for about 3-4 hours. If sauce becomes too thick or cooks down too much, add 1 cup of water. Use salt and pepper to taste.

Add 1/4 cup of Parmesan cheese to the sauce during the last hour and remove the basil leaf before serving.

Making and Cooking the Meatballs:

1 lb of ground beef ( no leaner than 80% for best results)
3/4 cup of Italian seasoned bread crumbs (Progresso)
1tsp parsley
1/2 tsp chopped garlic
1 large eggs
1/4 cup of Parmesan cheese
Add salt and pepper to taste

Mix the ingredients together using you hands. Get into the game and get your hands dirty. Cup the palm of you hand and put the meatball mix into the palm and creat a ball. The meatball should be the size of a racquet ball. (My uncle Lenny use to make his meatballs the size of a softball and we felt compelled to have a catch rather than eat the meatballs…….that said his meatballs were tasty). Fry the meatballs in olive oil until brown or bake in the oven at 350 degrees for about 30 min.

Once the meatballs are cooked put them into the sauce.
