— 1 Rotisserie Chicken

— Shredded Monterey Jack Cheese

— Enchiladas Ole Verde Sauce

— Corn Tortillas

— Savory Enchiladas Ole Sauce

— Chopped Onions

— Shredded Cheddar Cheese


Heat enchilada sauce in microwave or saucepan.

Heat skillet to medium high.

Set your ingredients for rolling: heat meats, shred cheese, chop onions. (Items can be chopped beforehand or purchased in the prep section of your supermarket.)

Dip tortillas in bowl of water, then place tortilla on skillet for five seconds.

Flip over, for five more seconds, then lay tortilla out on glassware for oven or microwave.

Fill with your favorite ingredients.

Roll then place side-by-side on tray or glassware.

Cover with enchilada sauce and sprinkle cheese.

Place in microwave for 1 minute 30 seconds or oven for 5 minutes at 350 degrees.

Serve with Side Salad (recipe below).

Easy Side Salad


— Shredded Lettuce

— Sliced Tomatoes

— Monterey Jack Shredded Cheese

— Sliced Avocadoes

— Red Onion


Combine ALL ingredients in bowl.

Add salad dressing (recipe below).

Salad Dressing:


— 1 Cup Of Apple Cider Vinegar

— 1/4 Cup Of Olive Oil

— 2 Tablespoons Salt
