The chicken fried steak starts with tenderloin which is cut into three, two to 2.5 ounce medallions, which you can order rare, medium or well-done, cooked in a cast-iron Dutch oven instead of a deep-fryer and comes with buttermilk whippers (light and fluffy “mashed” potatoes with roasted garlic and shallots) and bacon braised green beans with charred poblano gravy.
